Rainbow Birthday Cupcakes

Let me preface this by saying that I was so ready to make a rainbow cake, but then I decided that it seemed like a lot of work and also, we don’t have a cake form.

The idea behind this is super easy, but it took me a lot longer than I thought it would. So if you can get one person to help, it’ll go so much faster.

For Michael’s birthday I wanted to bake something special. I wanted it to be pretty, so I did some googling and found a recipe for a rainbow cake, which lead to a recipe for rainbow cupcakes.

I didn’t end up making the cream topping because we went to a restaurant and I didn’t think the cream would still be good by the end of dinner, so I just dusted the cupcakes with icing sugar.

Ingredients (makes 12 cupcakes)

Cake mix:

  • 130g soft butter (not liquid)
  • 130g sugar
  • 2 small eggs (room temperature)
  • 1 packet vanilla sugar
  • 250g flour
  • 1 1/2 teaspoons baking powder
  • 1 pinch salt
  • 80 ml milk (room temperature)
  • food colouring suitable for baking (purple, blue, green, yellow, orange, red – if you can’t find purple and orange, just get the rest and mix a little blue + red = purple and yellow + a little red = orange)

Topping

  • 200 ml whipped cream
  • 2-3 teaspoons icing sugar
  • optional sprinkles, etc for decoration

Method

1. Mix the softened butter with the sugar and vanilla sugar until it’s creamy.

2. Mix the eggs into the mixture.

3. Mix the flour, baking powder and salt in a separate bowl.

4. Alternate mixing the flour mixture and the milk into the mixture.

5. Once the dough is smooth, separate it evenly into 6 small bowls. These bowls of mixture then need to be coloured according to the rainbow.

6. Using a teaspoon, put one teaspoon of each colour into the cupcake forms. Start with purple, then add blue, green, yellow, orange and then red. Flatten each layer as you go, not forgetting to get the colour all the way to the edges. Once you start to put on the red layer, preheat the oven to 180°C.

7. Put the cupcakes in the oven for 12-15 minutes (fan-forced).

8. Test if the cupcakes are ready by doing a poke test with a skewer. If the skewer comes out clean, the cupcakes are ready. Let them cool completely on a cooling rack.

Topping

Cream – Beat the cream until it becomes firm, and then use a piping bag to decorate the cupcakes. The optional sprinkles can now also be added.

Icing Sugar – using a sieve, sprinkle icing sugar evenly on the cupcakes.

And voila! A rainbow cupcake.

Experimental Kitchen: Pork Fillet with a crust

It’s time to try some new things in the kitchen. I’ve been cooking the last few nights (we usually cook together) and made a winter couscous with bacon, mushroom linguine and Gong Bao chicken with rice.

Pork fillet is delicious and if you put it in the oven for the right amount of time, it remains juicy and tender.

Ingredients

For two people, we got about 400g pork fillet
1 small garlic clove
1 tablespoon honey
1.5 tablespoon mustard
1 tablespoon vinegar
a spritz of tabasco
1/2 teaspoon thyme
1/2 teaspoon rosemary
1/2 teaspoon marjoram
1/2 bundle parsley
salt
pepper
oil
potatoes (optional – you can also eat this with rice or noodles)

Method

1. Preheat over to about 180-200 degrees.

2. Heat oil in a pan and sear the pork fillet from all sides, sealing in the juice of the meat.

3. Mix the herbs, honey, mustard, pressed garlic, vinegar, tabasco, some oil (depending on how much meat you have) into a paste.

4. Rub the paste on the entire piece of meat and then place the meat in a baking form. (If you are eating potatoes, you can halve them and place them in the baking form as well.)

5. Put in the oven for about 20 minutes. About halfway through you can get a brush and put some of the oil and sauce back on the meat. The pork will need to be removed after 20 minutes so that it doesn’t dry out. It should be a bit crispy if possible. The potatoes can be left in the oven while you cut the meat into smaller pieces.

Birthday booklet

Best part about my birthday present: choosing what to do for the day

My birthday was last Friday and as a special surprise from my husband, I received some gifts as well as a self-made booklet. As he is a graphic designer, it also looked awesome. This little booklet contained 9 options of things that I could do on my birthday, as well as the weather forecast for the day and a sentence saying that he had taken the day off work to spend the day with me. Best first birthday as a married couple ever!

There were a ton of cool things to do, including going to the zoo in Karlsruhe, shopping and a sushi lunch, checking out the castle and gardens in Ludwigsburg, spending time at the Spring Oktoberfest (Frühlingsfest) in Stuttgart, going swimming at the mineral baths, going to the Wilhelma and spending the day at Tripsdrill.

Having never been to Tripsdrill and loving rollercoasters and rides, the choice was easy. I’ve been to Europapark which is a massive theme park. We were there 2 years ago and wanting to do everything, we arrived at 9am. We left at about 5pm and still did not try every single ride. Tripsdrill on the other hand is a much smaller amusement park and from what I had heard it was aimed at a younger demographic, so naturally, I was not expecting too much but nevertheless I was excited.

We arrived at the park at about 9.30am because the forecast said that it would start to rain just after midday. Not all of the rides were open yet and at the carpark there were about 10-15 cars there. Keep in mind, it was a Friday and not school holidays. A dream, if you’ve read our post about Universal Studios Singapore!

As it was my birthday I had free admission and received a Tripsdrill badge with my name on it, and was greeted and wished a happy birthday by the staff. We went in and rode some of the smaller rides, and I have to say that I was pleasantly surprised. Although some rides are skewed to younger thrillseekers, they were not too shabby for us either. As a huge plus, we were mostly on rides all by ourselves and never had to line up or wait to get onto a ride.

Tripsdrill is about an hour and a half drive from Stuttgart (of course, depending on the traffic) and because it’s in Schwabenland (this area of Southern Germany) the staff were amazingly friendly and the theme of the park is very traditional. Food is well-priced and generous and the entire place is neat and tidy.

The weather was perfectly sunny and even hot at times during our visit. We left at about 1pm and had conquered every ride. I enjoyed all of them, but of course as a bit of an adrenaline junkie I enjoyed the bigger rides the most. There is a great flume ride where you sit in a bath tub and a big wooden rollercoaster called ‘Mammut’ (Mammoth). Sometimes I feel like rides are way too short, but at Tripsdrill they seem to have mastered each ride and made them great experiences for the park guests. There was only one ride where I felt like ‘oh, was that it?’ but then we were sent around again automatically. On a few of the rides they also make souvenir photos or videos, which is always cool to see.

The ticket price also includes entry into the adjoining Wild Paradise (Wildparadies) where you can see a number of different wild animals, however we were worn out from all the rides.

All in all I think that they have a great variety of rides and animatronics around the park to make it interesting and exciting for young and old. I know that I can’t wait to go back some day and take more people with us once they’ve finished building their latest rollercoaster.
